No Fail Banana Bread

banana breadThis weekend was filled with lots of family valentines visits. Our little guy was so excited to hand out his cards and all the pictures he made! In return he was given more candy, cookies and chocolate than any two year old needs!

I know he would be furious to know that I forgot to mention the giant monkey he received. (It’s the same size as he is) It must now sleep in bed with him and his other 8 “friends” he already shares his toddler bed with….
I have no idea how they all fit in there or how he is comfortable, but whatever makes him happy (and bedtime easier) is ok with me!

This week I chose to share my banana bread recipe. It’s the only recipe I’ve tried that has never turned out badly, no matter how many times I’ve made it. It’s easy and lives up it it’s name!

It’s really good on its own, but we’ve tried it warm with butter, or cream cheese. As a layer in your trifle, or even warm with vanilla ice cream on top!
This simple dessert it one of my ultimate comfort foods and a favorite of my little guy!(My big guy likes it too!)

So this week I hope you enjoy this cozy comforting recipe.

No Fail Banana Bread

  • 2 Cups all purpose flour
  • 1 Cup sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/3 Cup milk
  • 1/4 Cup vegetable oil ( you can substitute apple sauce if you like)
  • 1 Egg
  • 3 Ripe bananas (mashed)
  • Optional 1 Cup of mix in (chocolate chips, walnuts, banana slices…etc)

preheat oven to 350
Grease a loaf pan

  1. In a medium bowl, combine flour, sugar, baking powder and salt.
  2. Then add your wet remaining ingredients and bananas, stir until dry ingredients are moistened. (Plus your optional mix in)
  3. Pour batter into pan, bake 55-60 min,
    until golden brown or when a toothpick inserted in the center comes out clean.
  4. Remove from oven, wait 5 mins before removing from pan.
