Over Night Baked Berry and Pecan French Toast

With Valentines Day just around the corner, I thought I would share a recipe that would brighten your sweethearts morning!

I used this recipe for Father’s Day last year and it was a hit with both Mike and Frankie! It’s so easy to do.

  • 6 thick slices of bread of your choice
  • 4 eggs
  • 1/2 cup of brown sugar
  • 1/4 cup of brown sugar
  • 1/4 tsp each of ground nutmeg and cinnamon
  • 2 cups of milk
  • 1 tsp of vanilla extract
  • 1 cup of chopped pecans
  • 1/4 of butter (melted)
  • 4 cups of mixed berries ( if frozen thaw and drain before use.)

1. Butter a 13x 9 inch glass baking dish. Arrange the bread in a single layer in the dish.
2. In a large bowl, whisk together eggs, the 1/2 cup of sugar, nutmeg and cinnamon until blended; whisk in milk and vanilla.
Pour evenly over bread. Cover and refrigerate overnight.
3. Preheat oven to 400 degrees

4. In a small bowl, combine remaining 1/4 cup of sugar, pecans, and melted butter. Spread berries evenly over bread mixture then sprinkle with pecan mixture.
5. Bake for 35 to 40 minutes or until bread is puffed in the centre and the fruit is bubbling.

The perfect breakfast help that special someone feel the love on Valentines Day!




Our New addition!

When mike and I got married there was no question as to if we wanted to have children, it was only a matter of when.
Before getting married we had both only lived at home, so we wanted to take a few years before trying. Enjoy being out on our own, and not having strict old school Italian parents to answer to! (sorry Mom and Dad)

After 3 years, and two miscarriages we were blessed with our beautiful boy! After going through the loss of two pregnancies, the stress, worry and many test during the pregnancy of our son, I decided that after the age of 30 I would not have any more children. Whatever children we had by then that would be it.

I was told the risks rise when a women enters 30 and then rise even more by age 35. After all that we had already gone through I was not willing to take that risk, not only for me but for our son.

So, at the beginning of 2014 the countdown was on!

My 29th birthday arrived on February 26th. I felt totally normal and enjoyed my not so normal birthday lunch of a caramel latte and vinegar soaked fries……..

The next morning I had a strange feeling, after sending Mike to the drug store I figured out the reason, We were expecting!

I’ll go into more specific detail about my pregnancy the treatments I receive and the birth story in a future post.

After months of nausea, excitement and wondering what this newest addition would be we finally got our answer! We invited our family over and had a little gender reveal party that’s where we shared the news that baby #2 was….

It took months for him to accept the fact that there was no little brother on the way, but he grew to be excited for the arrival of “his girl”!

Little Emilia arrived right on her due date of November 7th 2014 weighing 7 pounds 11 ounces, via C section. She immediately stole everyone’s hearts. Especially the one of her proud big brother!


She has made our family complete, I count my blessings everyday. I am so thankful to have two healthy, happy children! We now have our “million dollar family” and I can’t wait to see what the future has in store for us!

Wow, time has really flown by!

It`s been almost a year since my last post. I stopped posting right after we discovered we were expecting baby #2!
Between the excitement of finding out a new little one was on it’s way, the nausea, running after a 2 year old, the nausea, doctors appointments and did I mention the nausea? It was hard to actually find time to sit down and have energy to blog.

I made a promise to myself that I would take some me time in the new year and would dedicate some of that to this blog!

I’m coming back with more recipes, crafts and stories from my life as a mommy of 2!
I hope you will all enjoy reading as much as I will enjoy posting, I’m excited to get back into blogging and can’t wait for all of the fun to come!

I figured I would show you a little of what has gone on since I’ve been gone in my next few posts.
I’ll post about our newest addition, our big boy turning 3 and his super cool Lego party with a look back on his past parties. Some of the yummy things we’ve created in the kitchen and some crazy stories from our daily lives!

I’m sorry I’ve been gone for so long, but I’m back to work blogging which will hopefully include a blog facelift!
