Lemony Linguine with Tuna

Sometimes you’re so tired on a Friday night that what to make for dinner is the last thing you want to think about.

Sometimes you look in the fridge and realize way too late that you need to go grocery shopping.

Sometimes those are the days you come up with delicious dinner ideas! 

Last week was a very busy week for us, two family birthday parties and trying to get our back and front gardens in order took up most of the week! (Now that all of that snow and frost is finally gone!)

When I looked in the cupboard on Friday night it was slim pickings, but I did manage to come up with something delicious.

Lemony linguine with Tuna

  • 3/4 lb linguine
  • 4 Tbsp olive oil
  • 4 cloves of garlic sliced
  • 1/4 tsp crushed red pepper
  • 2 6oz cans of tuna packed in oil
  • 1 tsp finely grated lemon zest
  • 1/2 tsp of black pepper
  • 3/4 tsp salt
  • 1/2 Cup chopped fresh parsley
  • The juice of half a lemon
  1. Cook the pasta according to package directions. Reserve 1/2 cup of the cooking water, drain the pasta. (Set aside)
  2. In the original pan add oil, garlic, and red pepper cook over medium heat stirring often 2-3 min
  3. Add the pasta, tuna, lemon zest, salt, pepper, lemon juice and pasta water and cook over low heat, tossing until sauce is slightly thickened about 1-2 minutes.
  4. Add parsley and toss to combine.
  5. Serve hot add additional salt and pepper to taste.

Quick easy and delicious dinner idea, perfect for a last minute meal idea !

This week our kitchen is full of food, but that doesn’t mean I won’t be pulling this recipe out again soon!
