Guaca-Hummus

Summer is here!

I’ve found that we’ve been eating more snack sized meals during the day instead of sitting down to actual large meals, since we’re usually on the go.

It’s so hard not to reach for the chips and cookies that we have around the house, but I’ve found that food prep is key!

I know I know! You’re probably saying DUH!

I’ve started to always make sure I have cut fruit and veggies in the fridge ready at any moment to pull out and serve the ravenous toddler and 4 year old that we have in our house! (Seriously, they eat non stop. I cant imagine when they’re teenagers!)

The kids loooove hummus so I’ve come up with a few variations from the norm. This one is a must for guacamole lovers. It has a little kick to it and the freshness of the lime make it perfect for summer!

  • 1 Can of chickpeas
  • 1 Ripe avacado
  • 1 Jalapeno (chopped)
  • 1/4 Cup fresh cilantro (chopped)
  • The juice of 2 limes
  • 1/2 tbsp olive oil
  • salt and pepper to taste
  1. Rinse and drain your chickpeas.
  2. Combine all of your ingredients in your food processor and blend until smooth.
  3. For a thinner consistency, you can add 1 Tbsp of water at a time.

If guacamole and hummus had a baby, this would be the beautiful and delicious result!
