Sun Dried Tomato Alfredo Sauce

Sun dried tomato alfredo  

We all have that one thing our kids absolutely hate!

In my house it’s sun dried tomatoes and it’s not my kids, it’s my husband…..

So naturally when he saw what I was recipe testing, he turned up his nose. That is until he took a little taste and said “That’s restaurant quality and you know I HATE sun dried Tomatoes!”

This recipe is only a few easy steps, but delivers huge flavor! It can be served over your favorite pasta and guaranteed to satisfy even your pickiest eater…. Just ask Mike!

  • 1/4 Cup Sun dried tomatoes (drained)
  • 2 large basil leaves
  • 2 cloves of garlic
  • 1 Cup table cream
  • 4 Tbsp butter
  • 1/2 Cup grated Parmesan cheese
  1. In a food processor puree your tomatoes,basil and garlic, set aside.
  2. In a large skillet, on medium heat add your cream and butter. Bring to a simmer.
  3. Add your pureed ingredients to the skillet and continue to stir until sauce thickens, about 2-3 minutes.
  4. Add your cooked pasta to the skillet and toss until well coated with sauce. Add your Parmesan cheese and toss until evenly distributed and cheese is melted.

Serve topped with additional cheese if desired! (can you really ever have enough cheese??)
