Pizza For Breakfast: B.L.T and Greek

Breakfast pizzas

Sundays are the one day a week in our house, that we have a family breakfast.

With Mike working all week and the rush of the school routine, we pretty much just eat and run every morning!

When Sunday rolls around we are all in agreement that cereal and toast just wont cut it!

If you’ve been following along for a while, you know breakfast foods aren’t my friend….

Until now!

I’m telling you, these pizzas are a game changer! The kids were both shocked and super excited when they found out what was for breakfast. They’ve also already put in their orders for next week…

Just like with any pizza there are endless topping combinations and so many varieties!

You can follow the cooking instructions for your crust and eggs, but besides that any combination will work!

Preheat oven to 400 degrees

I used premade whole wheat pizza dough for both pizzas, rolled out into a 14 inch circle. Then placed onto my pizza pan.

  1. In a small bowl mix together your garlic and olive oil. Brush your mixture evenly onto the dough.
  2. Sprinkle your mozzarella onto the pizza.
  3. Carefully crack your eggs onto your pizza on top of cheese. Spaced evenly .
  4. Place your tomatoes and spinach.
  5. Sprinkle your Feta cheese making sure to cover all your toppings.
  6. Top with pepper to taste.

“B.L.T” Breakfast Pizza

  • 1 Cup cheddar cheese (shredded)
  • 1/2 Cup mozzarella cheese (shredded)
  • 1 package of bacon. (cooked and chopped)
  • 1/2 one large tomato (sliced)
  • 1/2 Cup spinach
  • 3-4 Large eggs
  1. Spread the cheddar cheese evenly over pizza.
  2. Carefully crack your eggs onto your pizza, on top of cheese. Spaced evenly.
  3. Place your tomatoes.
  4. Sprinkle your bacon, and spinach evenly over pizza.
  5. Top with mozzarella.

Cooking instructions

  1. Place pizzas on the middle rack of your preheated oven.
  2. Bake for 18- 20 mins until pizzas are golden brown and eggs are set but still runny.
  3. Remove from oven, let sit 2 minutes
  4. Slice, serve and enjoy!

There’s no sauce on these pizzas, but when that egg breaks open… OMG!!!

This has quickly become a Sunday morning favorite! With the endless combinations it would be perfect to serve at a family brunch, or did someone say breakfast for dinner??

Enjoy,

Fran
