Cheese + Chive Hash Brown Waffles

So for the first time in 33 years I FINALLY own a waffle maker!

Now, I literally want to make everything into waffles!!

I started off with plain old waffles, then cake mix waffles and NOW!!

These delicious beauties are crunchy and cheesy.

They’re perfect topped with chives and sour cream or with a fried egg! They are great for any meal of the day, but definitely perfect for breakfast or brunch!

You can whip these up super quick and I promise they’ll be a hit!

Join my waffle obsession, and make these this weekend!

  • 2 Cups of shredded potatoes (fresh or frozen)
  • 3 large eggs
  • 1/4 Cup milk
  • 1 Cup shredded cheddar cheese
  • 1/4 Cup fresh chopped chives
  • Salt and pepper to taste

If using fresh potatoes, place shredded potatoes in a paper towel an squeeze out extra moisture. This will prevent your waffle from being soggy!

  1. In a large bowl whisk together your eggs and milk.
  2. Add in your potatoes, cheese, chives salt and pepper and mix well.
  3. Place about a Cup of the mixture in your greased waffle iron and cook until golden brown.
  4. Too with extra chives, sour cream or a fried egg and enjoy!

No if you’ll excuse me, I’m about to go turn more foods into waffles…… lol!
