Spring has sprung!
It’s time to add some lighter meals to the rotation and get away from those heavy comfort foods I was loving, maybe a little too much…. over the winter months!
Incorporating salads into my diet can get boring, but this spin on the classic BLT is quickly becoming a frequent choice on the “menu” around here!
This salad is delicious, fresh and healthier than the usual! No carbs and with this Lilydale Turkey Bacon style, I can feel even better knowing that it has 70% less fat and 55% less calories than regular pork bacon ! Hello guilt free BLT !!
These fresh Ingredients pair perfectly with the easiest homemade vinaigrette you’ll ever make!
- 3 Tbsp olive oil
- 2 Tbsp freshly squeezed lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Mix together in a small bowl and set aside.
For your salad
- 6 strips of Lilydale Turkey bacon style, fully cooked, chopped
- 1 avocado sliced
- Spring mix salad
- 7-8 cherry tomatoes sliced
Layer your salad ingredients on a platter or in a bowl, top with dressing.
Serve to your family and friends and enjoy the fresh flavors of spring!
