Cinnamon roll French toast muffins

You know I love a good hack!

When you over buy at the grocery store, you need to find a way to use things up! I may or may not have bought way too many tubes of refrigerated cinnamon rolls so…..

So, I did our traditional Valentine’s Day heart cinnamon rolls and then did a little experimenting. The result was these delicious “muffins” that are a perfect breakfast treat, brunch addition or let’s be honest anytime of day snack!

  • 1 package refrigerated cinnamon rolls (I used Pillsbury Grands Cinnamon Rolls)
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp vanilla
  • 1 tsp ground cinnamon
  • 2 Tbsp maple syrup

Grease your muffin tin and preheat oven to 375

  1. In a medium sized bowl, whisk together your milk, eggs, cinnamon and vanilla.
  2. Unwrap package of cinnamon rolls and set icing aside. Cut the rolls into 8 pieces each and place in the egg mixture, stirring well to coat.
  3. Divide mixture into greased muffin tins. Spoon any remaining egg mixture over the top of each cup.
  4. Drizzle each cup with about half a teaspoon of maple syrup.
  5. Bake for about 15 to 18 minutes, or until tops are golden brown.
  6. Pour icing into a microwaveable container and heat for 7-10 seconds, just until icing is pourable. Drizzle over each muffin.
  7. Use a knife to loosen your muffins, gently remove and serve warm.

There you have it!

Maybe over shopping isn’t such a bad thing… at least when the result is this delicious!
