Ricotta chocolate chip cake

With this lockdown dragging on, it’s hard to find things to smile about. One thing that’s guaranteed to make me and probably you smile is… CAKE!

Since we can’t do much of anything else, recipe testing has been my go to. This one was a huge success and I can honestly say it’s one of the best cakes I’ve ever made. In these uncertain times, I give you the gift of a delicious cake recipe certain to put a smile on your face!

  • 1 ¾ Cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ Cup unsalted butter, softened
  • 1 ¼ Cups sugar
  • 1 15 ounce container ricotta cheese
  • 2 large eggs
  • 1 teaspoon vanilla
  • ¾ Cup chocolate chips

Preheat oven to 350 degrees and grease a 9-inch standard springform pan.

  1. In a medium mixing bowl, whisk together the flour, baking powder, and salt. Then set aside.
  2. In a large mixing bowl using a mixer, cream together the softened butter, sugar, and ricotta cheese until fluffy, about 5 minutes. Then add in the eggs and vanilla and mix for another minute. Gradually add in the flour mixture and mix until combined. Fold in the chocolate chips.
  3. Pour the batter into the prepared springform pan. Bake on center rack for 45-55 minutes, or until a toothpick inserted in cake comes out clean. Let cool in pan for at least 10 minutes before releasing springform and cool on wire baking rack completely.

This cake tastes amazing when still warm but equally as delicious the following day!
