Breakfast egg boats

When the whole family is home on a holiday long weekend, we always do a big brunch.

By the time a few of us roll out of bed, it’s usually closer to noon. So this brunch, breakfast, lunch Or anytime meal is perfect!

It’s an all in one dish, you can add your fave ingredients and switch it up every time! Customize them to everyone’s taste and I promise you’ll never get a complaint when you serve these delicious dishes!

Here’s our favourite version!

  • 2 small baguettes or one large
  • 6 medium eggs
  • 1/4 Cup of half and half cream
  • 1/2 Cup sliced ham cut into cubes
  • 1/2 Cup grated cheese. I used mozzarella but you can use your fave.
  • 2 Tbsp chopped chives (you can also use green onions)

Pre heat your oven to 350

  1. Prepare your baguette(s) by cutting a “V” shape into it and hollowing it out. Make sure to leave about a 1 inch boarder around the edge. Place on a greased baking sheet.
  2. In a medium bowl, beat your eggs. Then add the cream, ham, cheese, chives and salt and pepper to taste. Combine well.
  3. Spoon mixture evenly into your baguettes
  4. Bake for about 25 minutes until your eggs are puffy and the bread is golden brown.
  5. Let cool for 5 minutes.

The combinations are endless and they’re honestly so fun to make… and eat!
